Huevos rancheros
Una receta sencilla y rápida perfecta para cenas, que encanta a niños y mayores.
Ingredientes:
– 1 paquete de tortillas de trigo
– 6 o 7 huevos
– 1 cebolla grande
– Tomates cherry
– 1 o 2 cayenas
– 2 aguacates
– Aceite de oliva virgen extra
– Vinagre de Módena
– Sal y pimienta
– Lechugas variadas (opcional)
¿Cómo preparamos los huevos rancheros?
Primero pelamos y partimos la cebolla en juliana y freímos en una sartén con aove y la cayena. Cuando esté dorada añadir los cherrys en mitades y rehogar unos minutos más. Sacar la cayena.
Mientras se pocha la cebolla hacer la crema de aguacate batiendo el aguacate pelado con aceite, vinagre y sal.
Después batimos los huevos con sal y pimienta y los añadimos a la verdura pochada, moviéndolos hasta que estén cuajados.
Por último servimos poniendo sobre cada tortita una cama de la crema de aguacate y sobre esto, los huevos, y añadimos mayonesa, o sriracha, lechuga, enrollamos ¡y a disfrutar!
Se pueden añadir otras verduras como pimiento rojo o champiñones…
